For the salad
5 cups cooked black beans
3/4 cup chopped red bell pepper
3/4 cup chopped yellow bell pepper
1/2 cup chopped red onion
1/2 cup chopped jicama
1/2 cup cooked corn kernels
For the cilantro dressing
1/4 cup fresh lime juice
1/4 cup olive oil
1 tsp. sea salt
1/4 tsp. black pepper
1/4 tsp.black pepper
1 clove garlic, minced
1/2 cup fresh cilantro, chopped
1. Combine all salad ingredients in a large bowl.
2. Combine all dressing ingredients in a blender, blend until smooth. Pour dressing over salad and toss until evenly coated.
Add avocado and/or feta cheese and salsa for an extra kick!
