These fast and easy protein balls are a great portable snack if you are on the go. Perfect for before or after a workout or an afternoon pick-me-up.   You can modify them by using a different type of nut butter or leaving out the chocolate chips if you prefer.  

Yields 18 Protein Balls


-1 cup creamy salted almond butter (or peanut butter)
-1/3 cup pure maple syrup
-1/2 cup coconut flour
-1/4 cup mini dark chocolate chips (optional)


Combine the first three ingredients in a bowl and whisk or stir until well-combined.  Stir in chocolate chips (if using).  Put the bowl in the freezer for 15-20 minutes.

Line a baking sheet with wax or parchment paper.  Using a cookie scoop or tablespoon make balls with the mixture and place them on the prepared baking sheet.  Place the balls in the freezer for another 20 minutes.  Protein balls can be stored in the freezer (if you prefer them more firm) or in the refrigerator.  Enjoy!
